A raw, delicious and nutrient packed salad with just three ingredients: fennel, almonds and oranges. For the dressing, mix balsamic vinegar, salt, peper, lemon juice, agave syrup and canola oil (much healthier than olive oil).

This recipe has a good ratio of Omega-6 ratio to omega-3 fatty acids and is high in Vitamin K and C.

Compared to other sources of dietary fat, canola oil was shown to substantially reduce total cholesterol and low-density lipoprotein (LDL) cholesterol. It also increases the tocopherol levels, leading to an improved "insulinsensitivity".

Agave syrup is 1.4 to 1.6 sweeter than sugar but has a much lower glycemic index and glycemic load. Its impact on blood sugar is comparable to fructose. However, this ingredient is not absolutely necessary for this recipe and if you are not a sweets addict, you can enjoy this recipe without any sweetener.

Fennel on the other hand, is expecially used to improve digestion and increase satiety. It is "a rich source (more than 19% of the Daily Value, DV) of protein, dietary fiber, B vitamins and several dietary minerals, especially calcium, iron, magnesium and manganese, all of which exceed 100% DV (table)."
